Do you have vegan and vegetarian options?

Accepted Answer

Yes. The Forbici menu includes a selection of vegetarian pizzas and sides, along with dedicated vegan options including pizzas made with vegan-friendly dough and plant-based toppings. Dietary filters are available on our online menu. If you have specific requirements, our team is happy to talk you through the options when you visit.

Do you take bookings?

Yes. Table bookings can be made online for Forbici Manchester & Sheffield - walk-ins are also welcome.

Bookings for Trafford Centre are not open just yet - we're opening in August 2026. Watch this space.

Do you have wheelchair access?

Yes. Both Forbici Manchester and Forbici Sheffield have step-free entrances and accessible toilet facilities. If you have specific accessibility requirements or would like to confirm arrangements before your visit, please call us or use the contact form on our website.

Do you accommodate large parties?

Yes. We accommodate groups and large parties at both Forbici Manchester and Forbici Sheffield. For parties of 8 or more, please contact us in advance so we can prepare the right table setup and ensure everyone is properly looked after. Do you offer gluten-free options?

We do not currently offer a gluten-free pizza base. Our kitchens use wheat flour - specifically 00 Caputo flour for our Biga dough - so we cannot guarantee a gluten-free environment. If you have a severe gluten intolerance or coeliac disease, please speak to a member of our team before ordering so we can advise you appropriately.

Do you offer takeaway or delivery?

Yes. Forbici offers two ways to order away from the pizzeria: Click & Collect, available from both Manchester and Sheffield, and delivery via Deliveroo across both cities. Visit our Takeaway page for order links and to choose your location.

Are you dog friendly?

Well-behaved dogs are welcome in our outdoor seating in Sheffield. Dogs are not permitted inside the pizzeria. Water bowls are available on request.

What is Biga dough?

Biga is a pre-fermentation technique traditional to Italian bread and pizza making. At Forbici, our Biga dough is fermented for 12 hours at 24°C to reach a pH of 5.0, using 00 Caputo flour. This slow fermentation produces a lighter, more flavourful and more digestible pizza base with the characteristic tall, airy cornicione (outer crust) that Neapolitan pizza is known for.

Why do you cut pizza with scissors?

Cutting pizza with scissors is a Neapolitan tradition. In Naples, pizzas are soft and yielding straight from the oven - scissors allow clean, precise cuts without compressing the base the way a wheel cutter would. At Forbici, we cut every pizza four ways, at the table, with scissors. Our name is the Italian word for scissors, and is a direct nod to this tradition.

Where does the name Forbici come from?

Forbici is the Italian word for scissors. We chose it because scissors are central to Neapolitan pizza tradition — in Naples, pizzas are always cut with scissors. It also speaks to our approach: precise, confident and a little unconventional.
